1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt (to taste)

¼ teaspoon black pepper

1 tablespoon olive oil

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion, red bell pepper, and green bell pepper. Cook for about 5-7 minutes or until the vegetables become tender and start to release their sweetness. Stir in the minced garlic and cook for an additional 1-2 minutes, allowing the garlic to become fragrant and golden.

    Toast the Rice: Add the long-grain rice to the skillet, stirring it into the vegetable mixture. Let the rice toast for around 2 minutes, stirring continuously to enhance its flavor and achieve a delicate nutty aroma.

      Incorporate Seasonings and Broth: Sprinkle the Cajun seasoning, smoked paprika, dried oregano, salt, and black pepper over the rice mixture. Stir well to ensure that the rice is evenly coated with the seasonings. Gradually pour in the chicken broth, stirring to combine. Bring the mixture to a rolling boil, then reduce the heat to low. Cover the skillet and allow it to simmer for approximately 15 minutes, or until the rice is tender and has absorbed the liquid.
