1 lb (450g) boneless, skinless chicken breasts, diced

1 cup buffalo sauce (adjust according to your spice preference)

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 head of butter lettuce or romaine, leaves carefully separated

1/2 cup shredded carrots

1/2 cup diced celery

1/4 cup crumbled blue cheese or feta (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is hot and shimmering, add the diced chicken to the skillet. Season the chicken with salt, pepper, garlic powder, and onion powder. Cook the chicken for approximately 7-8 minutes, stirring occasionally, until it’s fully cooked and no longer pink in the center.

    Add the Sauce: Lower the heat to a simmer and pour in the buffalo sauce along with the apple cider vinegar over the cooked chicken. Stir thoroughly to ensure all pieces of chicken are evenly coated with the sauce. Allow the mixture to simmer for 2-3 minutes, which will help the sauce thicken slightly.

      Prepare the Lettuce Wraps: While the chicken simmers, wash the lettuce leaves gently under running water. After rinsing, carefully separate the leaves and pat them dry using a paper towel to remove any excess moisture.
