Ingredients

4 medium zucchinis

2 cups shredded cooked chicken (rotisserie chicken is ideal)

1 cup BBQ sauce (choose your favorite flavor)

1/2 cup corn kernels (fresh, canned, or frozen)

1/2 cup black beans, rinsed and drained

1 red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup shredded cheese (such as cheddar, Monterey Jack, or a blend)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking your zucchini boats.

Prepare the Zucchinis: Rinse the zucchinis under cool water. Slice each zucchini in half lengthwise. With a spoon, carefully scoop out a portion of the center flesh to create a hollow boat, leaving about 1/4 inch of the outer flesh to keep them stable. Set aside the scooped-out zucchini flesh for later use.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped red onion and diced red bell pepper. Sauté for about 3-4 minutes until they start to soften. Next, add the reserved zucchini flesh and continue cooking for another 2 minutes. Season the mixture with salt and pepper to taste.

Mix the Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, sautéed vegetables, corn, black beans, and half of the shredded cheese. Stir well to ensure that all ingredients are evenly coated and mixed.

Fill the Zucchini Boats: Place the hollow zucchini halves on a baking sheet lined with parchment paper for easy cleanup. Generously spoon the BBQ chicken filling into each zucchini boat, packing it in well.

Top with Cheese: Evenly distribute the remaining shredded cheese over the filled zucchini boats, allowing it to melt beautifully during baking.

Bake: Put the baking sheet in the preheated oven and bake for 25-30 minutes. The zucchinis should become tender, and the cheese should be bubbly and golden.

Garnish and Serve: After removing the zucchini boats from the oven, let them cool for a few minutes. If desired, sprinkle with fresh cilantro or parsley for a pop of color and flavor before serving warm.
