Ingredients

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 lb (450g) cooked shredded chicken (rotisserie chicken works beautifully for ease)

1 cup your favorite BBQ sauce (store-bought or homemade)

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking and facilitate easy cleanup.

Prepare the Sweet Potatoes: In a large mixing bowl, toss the diced sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Ensure that each piece is evenly coated with the mixture for optimal flavor.

Roast the Sweet Potatoes: Lay the sweet potato cubes out in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes or until they are fork-tender and slightly caramelized, flipping them once halfway through to ensure even cooking.

Combine Chicken and BBQ Sauce: While the sweet potatoes are roasting, take a medium bowl and mix together the shredded chicken and BBQ sauce. Stir well until the chicken is thoroughly coated with the sauce for maximum flavor.

Assemble the Sweet Potato Bites: After roasting, remove the sweet potatoes from the oven. Using the back of a spoon, create a small indentation in the center of each sweet potato cube. Generously fill each indentation with the BBQ chicken mixture.

Top with Cheese: Evenly sprinkle cheddar cheese over the BBQ chicken filling on each sweet potato bite, providing a cozy cheesy layer.

Final Bake: Return the baking sheet to the oven and bake for an additional 5-7 minutes, until the cheese has melted and is gloriously bubbly.

Garnish and Serve: Take the baking sheet out of the oven and let the bites cool for a couple of minutes. Garnish with freshly chopped parsley, if you desire, for a pop of color. Serve warm as a delightful appetizer or a satisfying main dish.
