BBQ Chicken Quesadillas

2 cups cooked chicken, shredded (preferably from rotisserie or grilled)

1 cup of your favorite BBQ sauce

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 small red onion, thinly sliced

1 cup corn kernels (fresh, frozen, or canned will work)

1/2 cup fresh cilantro, chopped

6 large flour tortillas

2 tablespoons olive oil (for cooking)

Salt and pepper to taste

Optional: Sliced jalapeños for added heat

Prepare the Chicken Mixture:

    - In a mixing bowl, combine the shredded chicken with the BBQ sauce until every piece is well coated. Taste and season the mixture with salt and pepper to enhance the flavor.

      Assemble the Quesadillas:

        - Place one tortilla on a clean, flat surface. On one half of the tortilla, evenly spread a generous layer of the BBQ chicken mixture.

          - Top the chicken with a sprinkle of the cheddar and Monterey Jack cheeses. Then, add a layer of the sliced red onion and corn kernels. If you like heat, toss on some jalapeño slices.

            - Finish with a light scattering of fresh cilantro over the toppings. Carefully fold the other half of the tortilla over the filling to create a half-moon shape.

              Cook the Quesadillas:

                - In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering. Once hot, gently place the filled quesadilla into the skillet. Cook for approximately 3-4 minutes on each side until the tortillas are golden brown and crispy, and the cheese has melted beautifully. Remove the cooked quesadilla and repeat the process with the remaining tortillas, adding more olive oil to the skillet as necessary.

                  Slice and Serve:

                    - Transfer the cooked quesadillas to a cutting board. Allow them to cool for about a minute. Using a sharp knife or pizza cutter, slice them into triangles for easy serving.
