Ingredients

2 cups fresh basil leaves, packed

1/2 cup freshly grated Parmesan cheese

1/3 cup pine nuts, lightly toasted

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and freshly cracked black pepper to taste

12 oz pasta of your choice (spaghetti, linguine, or penne)

Optional: 1/4 teaspoon red pepper flakes (for a hint of spice)

Optional: Cherry tomatoes, halved (for garnish)

Instructions

Prepare the Pasta: In a large pot, bring salted water to a rolling boil. Add your chosen pasta and cook according to the package instructions until just al dente, which usually takes about 8-10 minutes. Once cooked, reserve 1 cup of the starchy pasta water, then drain the pasta into a colander and set it aside.

Make the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, grated Parmesan cheese, and minced garlic. Pulse the mixture several times until all the ingredients are finely chopped and well incorporated.

Add Olive Oil for Creaminess: With the food processor running on low, carefully drizzle in the extra virgin olive oil. Continue blending until the mixture becomes a smooth and creamy consistency. Stop to scrape down the sides of the bowl with a spatula as necessary. Season the pesto with salt, black pepper, and red pepper flakes (if using) to taste.

Combine Pasta and Pesto: In a large mixing bowl, add the hot pasta to the pesto mixture. Toss thoroughly to ensure the pasta is well coated. If the pesto seems too thick, gradually add the reserved pasta water, a little at a time, until you achieve your desired creamy consistency.

Serve and Garnish: Plate the pesto pasta on individual dishes or a large serving platter. Garnish with halved cherry tomatoes for a pop of color and additional grated Parmesan cheese, if desired. Serve immediately and savor the fresh and vibrant flavors of your dish!
