4 large portobello mushrooms, stems removed

1/4 cup balsamic vinegar

1 teaspoon dried thyme

4 whole grain burger buns

4 slices fresh mozzarella cheese

1 cup fresh arugula

1 large tomato, sliced

Optional: slices of avocado and pesto for added flavor

Marinate the Mushrooms: In a medium-sized mixing bowl, whisk together the balsamic vinegar, olive oil, soy sauce, minced garlic, dried oregano, dried thyme, salt, and pepper until well combined. Carefully add the portobello mushrooms to the marinade, ensuring each one is completely coated. Cover the bowl with plastic wrap and let the mushrooms marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for a more intense flavor infusion.

    Preheat the Grill: Preheat your grill to medium-high heat, which is approximately 400°F (200°C). If you don’t have an outdoor grill, you can achieve similar results using a grill pan on the stove over medium-high heat.
