4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained

1/4 cup fresh basil leaves, torn

1/2 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Prepare the Balsamic Glaze: In a small saucepan, mix the balsamic vinegar and honey over medium heat. Allow the mixture to come to a gentle simmer. Let it reduce, stirring occasionally, until it thickens slightly, about 10-15 minutes. Once thickened, remove from heat and let it cool slightly.

    Season the Chicken: While the glaze is simmering, take the chicken breasts and season all sides generously with salt, pepper, and Italian seasoning (if using).

      Sauté the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts to the skillet and cook for 6-7 minutes on each side, or until they are nicely golden brown and cooked through (ensure the internal temperature reaches 165°F). Once cooked, transfer the chicken to a plate and set it aside.

        Create the Caprese Mixture: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Then, add the halved cherry tomatoes to the skillet and cook for 2-3 minutes, stirring occasionally, until they begin to soften.

          Add Cheese and Basil: Lower the heat to low, then gently stir in the mozzarella balls and the torn basil leaves. Cook for an additional 1-2 minutes, allowing the mozzarella to soften without completely melting.
