Ingredients

3 medium zucchinis, thinly sliced into rounds

4 medium ripe tomatoes, thinly sliced

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup heavy cream

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional for extra heat)

Salt and freshly ground black pepper, to taste

1/4 cup fresh basil, finely chopped (for garnish)

2 tablespoons extra virgin olive oil

1/2 cup breadcrumbs (preferably panko for added crunch)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking.

Prepare the Baking Dish: Generously grease a large baking dish with 1 tablespoon of olive oil to prevent sticking.

Layer the Vegetables: Begin by arranging a single layer of zucchini slices on the bottom of the prepared baking dish. Follow with a layer of tomato slices. Lightly sprinkle salt and black pepper on each layer to enhance flavor.

Continue Layering: Repeat the layering process, alternating between zucchini and tomatoes until all the vegetable slices are utilized in a stacked formation.

Make the Cream Mixture: In a medium mixing bowl, whisk together the heavy cream, minced garlic, dried oregano, dried thyme, and optional red pepper flakes. Season the mixture with salt and pepper according to your taste preferences.

Pour the Cream Mixture: Carefully pour the creamy concoction evenly over the layered zucchini and tomatoes in the dish, ensuring all vegetables are well-coated.

Add the Cheese: Generously sprinkle both the grated Parmesan and shredded mozzarella cheeses over the top of the layered vegetables, ensuring an even covering for a satisfying cheesy crust.

Prepare the Breadcrumb Topping: In a small bowl, combine the breadcrumbs with the remaining tablespoon of olive oil, mixing until the breadcrumbs are evenly coated. Evenly distribute this breadcrumb mixture over the cheese layer to create a delightful crunchy topping.

Bake: Place the baking dish in the preheated oven and bake for approximately 35-40 minutes, or until the top is golden brown and bubbly, and the vegetables are tender.

Garnish and Serve: Once baked, carefully remove the dish from the oven and let it rest for about 5 minutes to set. Just before serving, garnish with freshly chopped basil to add a burst of color and flavor.
