200g pasta (fusilli or penne work best)

200g feta cheese block

250g cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking.

    Prepare the Baking Dish: In a large baking dish, place the halved cherry tomatoes and minced garlic. Drizzle them with the olive oil and sprinkle the dried oregano, red pepper flakes (if using), and a generous pinch of salt and pepper. Toss everything together until well coated and evenly distributed.

      Add the Feta: Make a space in the center of the mixture and gently place the feta cheese block so that it’s surrounded by the flavorful tomatoes and garlic.

        Bake: Transfer the baking dish to the preheated oven. Bake for approximately 30 minutes, or until the feta is soft and creamy while the tomatoes are blistered and juicy.

          Cook the Pasta: Meanwhile, cook the pasta according to the package instructions until al dente. Before draining, reserve about 1/2 cup of the pasta cooking water, then drain the remaining water.

            Combine Ingredients: After baking, carefully remove the dish from the oven. If needed, add in some of the reserved pasta water until you achieve your preferred sauce consistency.
