Ingredients

8 ounces of your choice pasta (penne or fusilli are excellent options)

1 block (approximately 8 ounces) of feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to your heat preference)

Salt and freshly ground black pepper, to taste

A handful of fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it reaches the optimal temperature for baking.

Prepare the Baking Dish: In a large baking dish, add the halved cherry tomatoes along with the minced garlic. Pour in the extra virgin olive oil, sprinkle the dried oregano and red pepper flakes, and season generously with salt and freshly ground black pepper. Toss everything together to ensure the tomatoes are well-coated in the oil and seasonings.

Add Feta: Create a small well in the center of the tomato mixture and place the block of feta cheese directly into it. Drizzle a little additional olive oil over the feta and sprinkle it lightly with salt and pepper for extra flavor.

Bake: Carefully transfer the baking dish to your preheated oven. Bake for approximately 30 minutes, or until the feta is soft, slightly golden on top, and the cherry tomatoes are blistered and juicy.

Cook the Pasta: Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

Combine: After baking, remove the dish from the oven. Using a fork, mash the feta cheese and mix it with the roasted tomatoes until a creamy sauce forms. Gently fold in the cooked pasta, ensuring it is fully coated in the creamy feta and tomato mixture.

Garnish and Serve: Serve the pasta warm, topped with a generous sprinkle of fresh basil leaves. If desired, finish with a dusting of grated Parmesan cheese for added richness. Indulge in your comforting and flavorful Baked Feta Pasta Delight!
