Ingredients
  

For the Meatballs:

1 lb ground beef or turkey

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup freshly chopped parsley

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

For the Balsamic Vinaigrette:

1/2 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 tsp honey or maple syrup (for sweetness)

1 tsp Dijon mustard

1 clove garlic, minced

1/4 tsp salt

1/4 tsp black pepper

Optional: Fresh herbs (such as basil or thyme) for garnish

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Prepare the Meatball Mixture: In a large mixing bowl, thoroughly combine the ground meat (beef or turkey) with whole wheat breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, salt, black pepper, and oregano. Use your hands or a spatula to mix until the ingredients are evenly distributed.

      Shape the Meatballs: With your hands, scoop out portions of the mixture and roll them into 1-inch balls. Place each meatball on the lined baking sheet, ensuring they are evenly spaced for even cooking.

        Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. The meatballs should turn golden brown and reach an internal temperature of 160°F (70°C), indicating they are fully cooked.

          Prepare the Balsamic Vinaigrette: While the meatballs bake, whisk together balsamic vinegar, extra virgin olive oil, honey or maple syrup, Dijon mustard, minced garlic, salt, and black pepper in a small bowl until the mixture is well combined and smooth.

            Combine Meatballs and Vinaigrette: Once the meatballs are finished baking, remove them from the oven. Drizzle the prepared balsamic vinaigrette over the hot meatballs and gently toss them to ensure an even coating.

              Serve: Transfer the meatballs to a serving dish. For an extra touch, garnish with fresh herbs, like basil or thyme, if desired. Enjoy these savory bites warm as a delightful appetizer, a main dish, or even nestled in a sandwich!
