1 cup apple cider

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

½ cup unsweetened applesauce

¼ cup milk

¼ cup unsalted butter, melted

1 tsp vanilla extract

Cinnamon-sugar mixture for coating: ½ cup granulated sugar + 2 tsp ground cinnamon

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare a donut pan by greasing it with cooking spray or a light coating of oil to prevent sticking.

    Simmer Apple Cider: In a small saucepan, pour in the apple cider and heat over medium heat. Bring it to a boil, then reduce to a simmer. Allow it to reduce for about 15-20 minutes until it thickens and measures down to approximately ½ cup. Once done, set it aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Whisk together until evenly mixed.

        Combine Wet Ingredients: In a separate bowl, whisk together the granulated sugar, packed brown sugar, eggs, applesauce, milk, melted unsalted butter, vanilla extract, and the cooled, reduced apple cider. Mix until all ingredients are well integrated.

          Combine Mixtures: Gradually pour the wet mixture into the bowl containing the dry ingredients. Using a spatula or wooden spoon, mix gently until just combined. It’s perfectly acceptable to have a few lumps; do not overmix the batter.
