Ingredients

6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon fresh lime juice

Salt and black pepper, to taste

2 tablespoons cooked bacon, finely crumbled

1 tablespoon fresh cilantro, chopped (optional, for garnish)

Paprika, for garnish

Instructions

Hard Boil the Eggs: Begin by placing the eggs in a medium saucepan and covering them with cold water, ensuring there's about an inch of water above the eggs. Heat on medium-high until the water reaches a rolling boil. Once boiling, cover the pan with a lid, remove it from the heat, and let it sit undisturbed for 12 minutes.

Cool the Eggs: After 12 minutes, immediately transfer the eggs to an ice bath—a bowl filled with ice and water. Allow them to cool for about 5-10 minutes. This will make peeling them much easier. When cool, peel the eggs under gently running water to help remove the shells effortlessly.

Prepare the Filling: Once peeled, cut each egg in half lengthwise. Carefully pop out the yolks and place them in a mixing bowl. Set the egg white halves aside on a serving platter for later use.

Mash and Mix the Filling: To the bowl containing the egg yolks, add the ripe avocado, mayonnaise, Dijon mustard, fresh lime juice, and a pinch of salt and black pepper. Use a fork to mash the mixture until it's smooth and creamy, ensuring all ingredients are well combined.

Incorporate Bacon: Gently fold in the crumbled bacon to the avocado filling, reserving a sprinkle of bacon for garnish if desired.

Fill the Egg Whites: Using a spoon or a piping bag fitted with a star tip (for a decorative touch), fill each egg white half generously with the creamy avocado-bacon mixture.

Garnish and Serve: Finally, sprinkle the filled eggs with the reserved crumbled bacon, a dusting of paprika, and freshly chopped cilantro for an appealing finish.

Chill (Optional): For enhanced flavor and a refreshing taste, refrigerate the deviled eggs for about 30 minutes before serving.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 6 halves

Presentation Tips: Serve on a decorative platter, with extra lime wedges on the side for a burst of color and added zest.
