Apricot Glazed Baked Chicken

1 tablespoon extra virgin olive oil

1 cup apricot preserves

2 tablespoons low-sodium soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, finely grated

1 tablespoon freshly squeezed lemon juice

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

¼ teaspoon red pepper flakes (optional, for a hint of heat)

      Sear the Chicken: In a large oven-safe skillet, heat the extra virgin olive oil over medium-high heat. Once the oil shimmers, carefully add the chicken breasts. Sear each side for about 3-4 minutes until they are golden brown and develop a nice crust. Once done, remove the chicken from the skillet and place it on a plate to rest.

Add the apricot preserves, low-sodium soy sauce, Dijon mustard, minced garlic, finely grated ginger, lemon juice, fresh thyme, and red pepper flakes (if using).
