2 medium acorn squashes

1 lb apple sausage (or ground pork mixed with finely chopped apples)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup cooked wild rice or quinoa

1 cup fresh spinach, chopped

1 tsp dried sage

½ tsp ground cinnamon

Salt and pepper to taste

1 cup shredded sharp cheddar cheese (optional)

Olive oil for drizzling

Fresh sage leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting.

    Prepare the Squash: Carefully cut the acorn squashes in half from stem to bottom and scoop out the seeds with a spoon. Drizzle the insides with olive oil and generously sprinkle with salt and pepper. Arrange the squash halves cut-side down on a baking sheet. Roast in the preheated oven for approximately 25-30 minutes or until they are fork-tender.

      Cook the Sausage: In a large skillet, heat a drizzle of olive oil over medium heat. Add the apple sausage, using a wooden spoon to break it apart into smaller pieces. Cook for about 5-7 minutes, stirring occasionally, until the sausage is browned and fully cooked.

        Sauté Vegetables: To the skillet with the browned sausage, add the finely chopped onion. Sauté for about 4-5 minutes until the onion becomes translucent. Then, stir in the minced garlic, cooking for an additional 30 seconds until fragrant.

          Combine Ingredients and Add Spices: Incorporate the diced apples, cooked wild rice or quinoa, and fresh spinach into the skillet. Sprinkle in the dried sage and ground cinnamon, mixing everything together. Season with salt and pepper to taste. Continue to cook for another 3-5 minutes until the mixture is well combined and the spinach wilts.

            Stuff the Squash: Once the acorn squashes are done roasting, use tongs to carefully flip them over. Generously spoon the sausage and apple mixture into each half, pressing down slightly to pack it in. If desired, sprinkle the tops with shredded cheddar cheese for added richness.

              Return to Oven: Place the stuffed squashes back in the oven and bake for an additional 10-15 minutes, or until the cheese has melted and is bubbly.

                Serve: Carefully remove the stuffed squashes from the oven and allow them to cool for a few minutes. Garnish with fresh sage leaves if desired, then serve warm and enjoy the harmonious blend of flavors!
