Ingredients

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1 medium sweet apple, diced (such as Honeycrisp or Fuji for optimal flavor)

1 tablespoon pure maple syrup (adjust to taste)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 cup Greek yogurt (optional for added creaminess)

2 tablespoons chopped walnuts (or pecans for variation)

A pinch of ground nutmeg

Optional Toppings: additional apple slices, a drizzle of almond butter, or extra nuts

Instructions

In a medium-sized mixing bowl, combine the rolled oats, almond milk, maple syrup, ground cinnamon, vanilla extract, and a pinch of nutmeg. Stir thoroughly to ensure that all oats are well-coated and fully submerged in the liquid.

Gently fold in the diced apple and chopped walnuts, making sure they are evenly distributed throughout the oat mixture.

If you prefer a creamier texture, incorporate the Greek yogurt into the mixture at this stage, stirring until combined.

Transfer the oat mixture into a container with a tight-fitting lid or divide into individual serving jars for easy portioning.

Seal the container(s) and place them in the refrigerator. Allow the oats to soak overnight or for a minimum of 4 hours, enabling them to absorb the liquid and soften.

In the morning, give the oats a good stir. If desired, add more milk to achieve your preferred consistency.

For an added burst of flavor and texture, top your oats with extra apple slices, a drizzle of almond butter, or a sprinkle of additional chopped nuts.

Serve chilled, and relish the delightful taste of your homemade Apple Pie Overnight Oats!
