4 boneless, skinless chicken breasts

1 cup apple cider (ensure it's not vinegar)

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

2 medium apples, cored and sliced (Granny Smith or Honeycrisp are ideal)

1 teaspoon ground cinnamon

1 teaspoon dried thyme

1 tablespoon Dijon mustard

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1/2 cup chicken broth for added sauce
