Ingredients

2 cups cooked macaroni pasta

1 cup sharp cheddar cheese, shredded

1/2 cup pepper jack cheese, shredded

1/2 cup cream cheese, softened

1/2 cup cooked ground beef or turkey, seasoned with taco seasoning

1/4 cup sour cream

1/4 cup salsa

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder (optional for extra spice)

Salt and pepper to taste

1 cup breadcrumbs (panko for extra crunch)

2 large eggs, beaten

Cooking spray

Instructions

Prepare the Mac and Cheese Mixture: In a large mixing bowl, combine the cooked macaroni pasta, shredded sharp cheddar, pepper jack cheese, soft cream cheese, seasoned ground meat, sour cream, salsa, garlic powder, onion powder, chili powder (if using), and seasoning with salt and pepper. Stir the mixture thoroughly until all ingredients are well incorporated.

Form the Balls: Scoop about 1 to 2 tablespoons of the mac and cheese mixture and roll it into a ball using your hands. Place the formed balls on a parchment-lined baking sheet. Continue this process until all of the mixture has been shaped into balls.

Chill the Balls: Cover the baking sheet with plastic wrap and refrigerate the formed balls for 30 minutes. This chilling step will help maintain their shape during the cooking process.

Set Up for Breading: In a shallow dish, mix the breadcrumbs with a pinch of salt and pepper. In a separate shallow dish, beat the eggs until well mixed.

Bread the Balls: Take each chilled mac and cheese ball and first dip it into the beaten eggs, ensuring it is fully coated. Then, roll it in the seasoned breadcrumbs, pressing gently to make sure the crumbs stick. Repeat this process until all balls are evenly coated.

Air Fry the Balls: Preheat your air fryer to 375°F (190°C). Spray the air fryer basket lightly with cooking spray to prevent sticking. Arrange the breaded balls in a single layer in the basket, making sure they’re not overcrowded—cook in batches if necessary. Lightly spray the tops of the balls with cooking spray for optimum crispiness.

Cooking Time: Air fry the balls for 10-12 minutes, flipping them halfway through the cooking time until they are golden brown and crispy on the outside.

Serve: After cooking, allow the Taco Mac and Cheese Balls to cool for a few minutes before serving. These delicious bites are perfect with your favorite dips such as additional salsa, guacamole, or a creamy ranch dressing.
