Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 large eggs, beaten

1 cup panko breadcrumbs

1/4 cup buffalo sauce (plus additional for tossing)

1 tablespoon olive oil

Optional: Chopped green onions or crumbled blue cheese for garnish

Instructions

Prepare the Chicken: In a large mixing bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and paprika. Mix well until all chicken pieces are thoroughly coated with the seasoning.

Set Up Dipping Stations: Create a dredging station by placing the all-purpose flour in one shallow dish. In the second dish, pour the beaten eggs. In a third dish, spread out the panko breadcrumbs for easy access.

Coat the Chicken: Take each seasoned chicken piece and first dredge it in the flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any extra to drip off. Finally, roll the chicken in the panko breadcrumbs, pressing gently to ensure a good coating for maximum crispiness.

Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes, allowing the appliance to reach the ideal cooking temperature.

Arrange in the Air Fryer: Lightly spray the air fryer basket with olive oil to prevent the chicken from sticking. Arrange the coated chicken bites in a single layer in the basket, ensuring they are spaced apart to promote even cooking.

Air Fry the Chicken: Cook the chicken bites for approximately 10-12 minutes. Shake the basket halfway through the cooking time to ensure even crispness. The chicken is ready when it becomes golden brown and crispy.

Toss in Buffalo Sauce: Carefully remove the cooked chicken bites from the air fryer and transfer them to a clean mixing bowl. Drizzle the buffalo sauce over the bites and gently toss until they are evenly coated.

Serve: Arrange the buffalo chicken bites on a serving platter. Garnish with chopped green onions or crumbled blue cheese if desired. Serve immediately alongside your favorite dipping sauce for an added flavor boost!
