1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour, if preferred)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (or to taste for your desired spice level)

1 cup plant-based milk (or dairy milk)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil (optional, for extra crispiness)

Fresh parsley, finely chopped (for garnish)

Optional: celery sticks and blue cheese dressing for serving

Instructions
 

Prepare the Cauliflower: Thoroughly wash the cauliflower and cut it into bite-sized florets. To ensure optimum crispiness, pat the florets dry with a paper towel to remove any excess moisture.

    Make the Batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Whisk together until well blended. Gradually pour in the plant-based milk, mixing continuously until a smooth batter forms. The consistency should be thick enough to coat the florets well but still pourable.

      Coat the Cauliflower: Take each cauliflower floret and dip it into the batter, ensuring it is evenly coated. Allow any excess batter to drip off. Place the coated florets on a plate while you preheat your air fryer.

        Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat for about 5 minutes to achieve the right cooking temperature.

          Cook the Cauliflower: Lightly spray the air fryer basket with cooking oil to prevent sticking. Arrange the coated cauliflower florets in a single layer in the basket (you may need to do this in batches). Optionally, drizzle a little olive oil over the florets for added crispiness.

            Air Fry: Cook the cauliflower in the air fryer for 15-20 minutes, shaking the basket midway through the cooking process to ensure even cooking. The florets should turn a beautiful golden brown and achieve a crispy texture.

              Toss in Buffalo Sauce: Once cooked, transfer the florets to a large mixing bowl. Pour the buffalo sauce over the cauliflower and toss gently to coat each piece evenly.

                Final Air Fry: Return the sauced cauliflower back into the air fryer basket. Cook for an additional 5 minutes at 375°F (190°C) to allow the buffalo sauce to caramelize slightly, enhancing the flavor.

                  Garnish and Serve: Once done, remove the cauliflower bites from the air fryer. Garnish with freshly chopped parsley before serving. Enjoy hot with crunchy celery sticks and a side of blue cheese dressing, if desired.
