Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or chickpea flour for a gluten-free option)

1 cup non-dairy milk (such as almond or soy milk)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup buffalo sauce (adjust to your spice preference)

2 tablespoons olive oil (or use cooking spray)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Cauliflower: Rinse the head of cauliflower under cold water. Carefully cut it into bite-sized florets, ensuring they are uniform in size to promote even cooking.

Make the Batter: In a large mixing bowl, whisk together the all-purpose or chickpea flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually pour in the non-dairy milk while stirring continuously until you reach a smooth and thick batter.

Coat the Cauliflower: Individually dip each cauliflower floret into the batter, making sure each piece is generously coated. Allow any excess batter to drip off before placing them aside.

Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for approximately 5 minutes to ensure it's hot and ready for the cauliflower.

Air Fry the Cauliflower: Arrange the battered florets in a single layer in the air fryer basket. Lightly spray or drizzle olive oil over the coated cauliflower. Cook for 12-15 minutes, shaking the basket halfway through to promote even crispness.

Toss in Buffalo Sauce: Once the cauliflower is golden brown and crispy, transfer the florets into a large mixing bowl. Drizzle the buffalo sauce over the crispy cauliflower and gently toss to ensure they are evenly coated.

Final Air Fry: Place the sauced cauliflower back into the air fryer basket. Air fry for an additional 3-5 minutes, allowing the buffalo sauce to slightly caramelize and enhance the flavor.

Serve: Carefully remove the cauliflower from the air fryer and transfer it to a serving plate. For a vibrant finish, garnish with fresh chopped parsley. Pair it with celery sticks or a cooling vegan ranch dip for an excellent contrast to the spice.
