1 large eggplant, sliced into 1/4-inch rounds

1 teaspoon salt

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon Italian seasoning

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Olive oil spray

Fresh basil leaves, for garnish (optional)

Prepare the Eggplant: Place the sliced eggplant on a baking sheet and evenly sprinkle salt across both sides of each slice. Allow the eggplant to rest for about 30 minutes; this process helps draw out excess moisture and bitterness. After 30 minutes, rinse the slices under cold water to remove excess salt and pat them dry with paper towels.

    Set Up the Breading Station: Prepare three shallow bowls: one with all-purpose flour, another with the beaten eggs, and the last one with a mix of breadcrumbs and Italian seasoning. This assembly line will streamline the breading process.

      Bread the Eggplant: Take each slice of eggplant and first dredge it in the flour, ensuring to shake off any excess. Next, dip the slice into the beaten eggs, letting any excess egg drip back into the bowl. Finally, coat the slice with the breadcrumb mixture, pressing lightly to ensure the breadcrumbs adhere well.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for approximately 5 minutes while you finish breading the eggplant slices.
