30-Minute Spinach and Cheese Stuffed Shells

20 large pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups fresh spinach, chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves (for garnish)

Instructions
 

Cook the Shells: In a large pot, bring salted water to a rolling boil. Carefully add the pasta shells and cook according to the package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the shells and allow them to cool slightly while you prepare the filling.

    Prepare the Filling: In a spacious mixing bowl, combine the ricotta cheese, 1/2 cup of the shredded mozzarella cheese, grated Parmesan cheese, egg, chopped spinach, minced garlic, salt, and black pepper. Use a spatula or a wooden spoon to mix the ingredients thoroughly until you achieve a uniform filling.

      Preheat the Oven: Set your oven to preheat at 375°F (190°C) so it’s ready for baking.

        Stuff the Shells: Pour approximately 1/2 cup of marinara sauce evenly onto the bottom of a 9x13-inch baking dish. Take each cooked shell and fill it generously with the spinach and cheese mixture. Arrange the stuffed shells in the baking dish with the open side facing upwards.

          Add Sauce and Cheese: Once all the shells are filled, pour the remaining marinara sauce evenly over the top. Finish by sprinkling the remaining 1/2 cup of shredded mozzarella cheese over the marinara sauce, ensuring an even layer.

            Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 15 minutes. After that, carefully remove the foil and continue to bake for an additional 5-10 minutes, or until the cheese is melted, bubbling, and golden-brown.

              Serve: Once baked, take the dish out of the oven and allow it to cool for a few minutes to set. Just before serving, add a sprinkle of fresh basil leaves on top for an aromatic garnish.
