1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken or vegetable broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Sea salt and freshly ground black pepper, to taste

Juice of 1 fresh lemon

2 green onions, sliced thinly

Fresh parsley, chopped (for garnish)

Cook the Rice: In a medium saucepan, combine the jasmine rice and chicken or vegetable broth. Bring to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork and set aside.

    Prepare the Shrimp: While the rice cooks, heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the shrimp. Season them with smoked paprika, red pepper flakes, sea salt, and black pepper. Cook for about 2-3 minutes on each side, or until the shrimp are bright pink and opaque.
