2 tablespoons olive oil

3 cloves garlic, minced

4 oz (115 g) sun-dried tomatoes, chopped (preferably packed in oil)

5 oz (140 g) fresh spinach (or 1 cup frozen spinach, thawed and well-drained)

1 cup heavy cream (or coconut cream as a dairy-free alternative)

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

½ teaspoon red pepper flakes (adjust to your heat preference)

Salt and freshly cracked pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Pasta: In a large pot, fill with water, add a generous pinch of salt, and bring to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve ½ cup of the cooking water, then drain the pasta and set it aside in a large mixing bowl.

    Sauté Aromatics: In the same pot or a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant and slightly golden, taking care not to let it burn.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and let them sauté for an additional 2-3 minutes. This step helps to meld their rich flavors into the oil.

        Incorporate Spinach: Add the fresh spinach to the pot. Stir gently and cook until the spinach is wilted, about 2 minutes for fresh spinach, or about 1 minute if using thawed frozen spinach. Ensure the frozen variety is well-drained before adding it.
