Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh spinach, roughly chopped

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

1 teaspoon Italian seasoning

Optional: fresh parsley, chopped, for garnish

Instructions

Cook the Pasta:

    - Fill a large pot with salted water and bring it to a rolling boil. Add the fettuccine and cook according to the package directions until al dente, usually around 8-10 minutes. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set it aside.

      Sauté the Chicken:

        - Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the bite-sized chicken pieces. Season the chicken with salt, pepper, and Italian seasoning. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside on a plate.

          Prepare the Sauce:

            - In the same skillet, add the remaining tablespoon of olive oil. Once heated, add the minced garlic and sauté for about 30 seconds, stirring until fragrant but being careful not to let it brown. Next, pour in the heavy cream and bring the mixture to a gentle simmer, allowing it to thicken slightly.

              Add the Cheese:

                - Gradually whisk in the grated Parmesan cheese until it has fully melted and the sauce is smooth. If the sauce appears too thick, stir in a little of the reserved pasta water until you reach your desired consistency.

                  Combine Ingredients:

                    - Return the cooked chicken to the skillet with the sauce and fold in the chopped spinach. Cook for an additional 2-3 minutes, allowing the spinach to wilt and the flavors to meld together.

                      Toss with Pasta:

                        - Add the drained fettuccine to the skillet, tossing gently to coat the pasta evenly in the creamy sauce. Taste and adjust seasoning with additional salt and pepper if necessary.

                          Serve:

                            - Ladle the Chicken Alfredo onto plates, finishing each serving with a sprinkle of fresh chopped parsley for a burst of color and flavor. Enjoy this quick and delightful meal!
