30-Minute Cheesy Spinach and Mushroom Quesadillas

1 tablespoon olive oil

1 cup mushrooms, sliced

2 cups fresh spinach, tightly packed

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper, to taste

4 large flour tortillas

2 cups shredded mozzarella cheese (or a Mexican cheese blend)

½ cup queso fresco or feta cheese, crumbled (optional)

Salsa and sour cream for serving

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for approximately 4-5 minutes, stirring occasionally, until the mushrooms are tender and slightly caramelized. Incorporate the fresh spinach along with the garlic powder, onion powder, and a pinch of salt and pepper. Continue to cook for an additional 2-3 minutes, or until the spinach wilts and all ingredients are well mixed. Remove the skillet from heat and let the mixture cool slightly.

    Assemble the Quesadillas: On a clean work surface, lay out two of the flour tortillas. Evenly distribute half of the sautéed mushroom and spinach mixture onto each tortilla. Generously sprinkle 1 cup of shredded mozzarella cheese over the vegetable filling on each tortilla. If desired, add a sprinkle of crumbled queso fresco or feta cheese to enhance the flavor. Place the remaining two tortillas on top to close the quesadillas.

      Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Carefully add the first quesadilla to the skillet. Cook for about 3-4 minutes on one side until the tortilla is golden brown and the cheese has melted. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side. Repeat with the second quesadilla, adding more olive oil to the skillet between cooking if necessary.

        Serve: Once cooked, remove the quesadillas from the skillet and allow them to cool for a minute. Using a pizza cutter or a sharp knife, cut each quesadilla into wedges. Serve the quesadillas hot alongside salsa and sour cream for dipping.
