Ingredients

1 pound large shrimp, peeled and deveined

4 medium zucchinis, spiralized (or cut into julienne strips using a vegetable peeler)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust according to heat preference)

Salt and black pepper, to taste

1 lemon, juiced and zested

1/4 cup fresh parsley, finely chopped

Grated Parmesan cheese (optional, for serving)

Instructions

Prepare Zoodles: Begin by spiralizing the zucchinis to create zoodles. If you don't have a spiralizer, you can use a vegetable peeler to slice the zucchinis into thin, noodle-like strips. Once prepared, set them aside on a clean plate.

Sauté Shrimp: In a large skillet set over medium heat, melt 2 tablespoons of unsalted butter. When the butter has completely melted and is bubbling lightly, add the minced garlic. Sauté for about 1 minute until it becomes fragrant, being careful not to let it brown.

Cook Shrimp: Add the peeled shrimp to the skillet along with the red pepper flakes, salt, and black pepper. Cook for 2-3 minutes, stirring gently, until the shrimp turns pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.

Sauté Zoodles: In the same skillet, add the remaining 2 tablespoons of butter along with the spiralized zucchini. Sauté for 2-3 minutes, stirring occasionally, until the zoodles are tender yet still slightly firm (al dente). Season with salt and pepper to enhance the flavor.

Combine: Return the cooked shrimp back to the skillet with the zoodles. Drizzle in the lemon juice and sprinkle the lemon zest over the mixture. Toss everything together gently with tongs or a spatula, allowing the flavors to meld for an additional minute.

Garnish and Serve: Remove the skillet from heat, and generously sprinkle with the chopped parsley. Taste and adjust the seasoning if necessary. Serve the dish immediately, and if desired, top with freshly grated Parmesan cheese for an extra layer of flavor.
